Directions
Wash pineapple prior to cutting.
Put all of the rind and center core in a pan covered with water.
Bring to a boil and then simmer covered for 1 hour or more.
Remove from heat.
Remove rind
Strain into a pitcher.
Refrigerate or drink warm
Add in a few drops of stevia if need a bit sweeter.
