Chocolate Avocado Pudding

I love sweets. I crave them all the time. I love a bit of chocolate or sweet after a meal. I am not sure how that all got started but something I totally enjoy.


I also know that if I eat ANY amount of real sugar I go down a rabbit hole. I then get on the sugar addiction cycle that just doesn't like to stop.


Climbing out of that rabbit hole is not pleasant. For me it requires quite a bit of will power to get through the first few days to a week of the severe cravings as well as the runny/congested nose, joint achiness, crabbiness and mood swings (detox). For this reason I do my absolute best to walk around the rabbit hole and not indulge at all but.... sometimes I choose this path and I must be accountable to the consequences with NO COMPLAINTS.


So one thing I do make on a regular basis and especially while climbing out of the hole is Chocolate Avocado Pudding.


This recipe has healthy fats and no added sugars - stevia instead. The cacao is also an antioxidant and anti-inflammatory foods. Woot Woot.

So I begin with ripe, ripe avocados. Those that are a bit bruised and mushy and you don't want on your salad is best.


I use organic cacao powder and liquid sweetleaf stevia to sweeten it.


Put the avocado meat in a bowl and for this amount I added in 1/4 C of the cacao and 3 full droppers of Stevia. Use 2 and then taste after mixing and add more as needed.



Mix with mixer until smooth. May seem a bit loose or watery but it will harden up after refrigerated.






Measure out about 2 Tablespoons into small cups, cover and refrigerate. For the 4 avocados I got 8 servings (ate one serving out of the bowl. ;-). Mmmm so good.


It not only hits that sweet tooth it is loaded with healthy fats that help to curb hunger as well.

RECIPE:

Chocolate Avocado Pudding


INGREDIENTS:

Ripe Avocados

Unsweetened Cacao

Stevia to taste


DIRECTIONS:

Put Avocado meat in bowl - add in ~ 1 Tablespoon per avocado and 1 Full Dropper of stevia for 2 Avocados.


Mix with mixer til smooth. Divide into 2T (~ 1/2 an avocado) serving. Refrigerate and Enjoy!!
