Birthday Cake

March is a big month for birthdays in this family and what do we have with birthdays? Birthday Cakes of course!!

If I am not making one from scratch I will use one of my favorite box cakes. Simple Mills Chocolate cake mix with the Simple Mills vanilla icing.

The cake is sweetened with coconut sugar and makes only a 9" round or 12 cupcakes so we don't have alot of leftovers. The frosting does have organic powdered sugar in it but of course that can be left off or is that special treat once in a while.

Celebrations don't have to wreck the plan - it just takes a bit of planning.
