Shake 'n Bake the Healthy Way
I love when my clients give me ideas for posts. Today a client was looking for a way to crunch up her chicken and to keep in the moisture - "You know like Shake n Bake." Yeppers - while I am more of plain cook, I do like to have some different ideas to switch things up. Here is a clean, easy shake 'n bake recipe that can be done in the oven or even air fryer.
2 pounds chicken drumsticks or a mix of chicken pieces
0.25 cup almond flour
1.25 teaspoon kosher salt
0.25 teaspoon ground pepper
1 teaspoons paprika
0.5 teaspoon cumin
0.5 teaspoon sage
0.25 teaspoon garlic powder
0.25 teaspoon onion powder
Preheat oven to 450F.
In large zipper storage bag, combine all ingredients except chicken and oil.
Line 2 13×9-inch pans with parchment paper for easy cleanup.
Drizzle olive oil over each pan.
Place a couple pieces of chicken in the seasoning bag and shake until coated.
Place coated chicken on lined pans.
Bake, uncovered, for 30 minutes. Turn over and bake 15-20 minutes longer.
Note: This can be done in the air fryer per the air fryer directions.
