Holiday Comfort Recipe

I remember the smell of Banana bread cooking in the oven when my grandma would come to visit for Christmas. We always had several loaves of banana nut bread that we would eat as well as give out for gifts.

I came across that recipe yesterday and thought - how can I change this to make this healthy? Well, I went to work and it turned out awesome.

Paleo Banana Bread


2 eggs

1/2 C grass fed butter

1/2 C coconut oil

1/2-3/4 C Maple sugar

2 C Gluten free all purpose flour (I used this)

1 tsp baking soda

4 crushed overripe bananas


Cream the butter and coconut oil with the maple sugar, add in eggs and bananas.

Add in dry ingredients and mix thoroughly.

I added in Enjoy Life mini chips to 2 of the loaves and raw pecans to 2 loaves.

Bake 350 for 45-60 minutes for a large loaf. For the small loaves like that I baked 30-45 minutes.
