Apple Coffee Cake
Apple Coffee Cake or Muffins

INGREDIENTS:
1 each - APPLE, FRESH, MEDIUM
0.5 cup - RAISINS, BLACK
1 tbsp - CINNAMON, GROUND
0.5 cup - APPLESAUCE, UNSWEETENED
0.25 tsp - BAKING SODA
0.33 cup - COCONUT FLOUR
0.5 cup - MAPLE SYRUP GRADE B
0.5 cup - COCONUT OIL
6 EACH - EGG
1 scoop - Blue Bonnet, Jay Robb or other high quality WHEY PROTEIN, VANILLA
2 tbsp - VANILLA EXTRACT
INSTRUCTIONS:
Chop apples and add raisins and cinnamon in small bowl.
Combine rest of ingredients in medium bowl with mixer. Pour into coconut oiled 8x8 pan.
Sprinkle apple mixture to top and blend in with knife.Bake 350 for 35-40 minute until top brown and toothpick comes out clean. Enjoy.
